One of the best known symbols of
Hanukah is the dreidel.  And,
one of my favorite Hanukkah
projects is a dreidel game board.

A dreidel is a four-sided top
with a Hebrew letter on each side.

The four letters are:
Shin
Player puts 1 token into the pot
Hey
Player takes half of the pot
Gimel
Player takes all tokens in the pot
Nun
Nothing happens,
next player spins the dreidel
grate: Coarsely grate potatoes and onion in a food
processor.  In a colander, squeeze the grated
mixture to press out as much liquid as possible.

combine: In a large bowl, combine the potato/onion
mixture, eggs, salt, pepper, flour or matzo meal, and
baking powder.

fry: Heat about an inch of oil in a 12-inch skillet.
When the oil is bubbling, gently drop about 2
tablespoons of the potato mixture into the pan. (The
mixture should hold a round shape.) Gently flatten
each latke with the back of a spoon. Fry over
medium heat for about 3 or 4 minutes on each side,
or until the latkes are golden brown and crisp. Use
two pancake turners when flipping latkes so the oil
doesn't splatter. Drain cooked latkes on paper towels
and set them aside in a warm oven. Add more oil to
the pan as needed for frying the rest of the pancakes.
Dreidel is a popular game played during the
holiday. Players use pennies, nuts, raisins,
or chocolate coins (gelt) as tokens.
Homemade Latkes

shopping list:
4 large potatoes, peeled
1 medium onion
2 large eggs
1 1/2 tsp. salt
1/4 tsp. white pepper
2 tbsp. all-purpose white flour or matzo meal
3/4 tsp. baking powder
Vegetable oil for frying (peanut oil works best)
enjoy:
Serve hot with applesauce,
sour cream, jam or sugar.
